The Rubia Gallega is one of the most precious meat in the world and it differs from the other types of meat because the cows are between 5 and 10 years old ( for this reason is nicknamed “Vaca Vieja”, the old cow) and are raised in the wild Galicia. The name “Rubia” ( which in Spanish means blonde) comes from the colour of its mantle and its fat which is golden.
Defined as “la carne que no se olvida ( the meat that you can’t forget)”, the Rubia Gallega’s meat has particular organoleptic and nutritional qualities.
