The Maremmana is a prized breed of cattle, reared in the pastures that stretch between Southern Tuscany and Northern Lazio, next to the coast of Grosseto and Viterbo, in the heart of Maremma.
The Maremmana breed descends from the gray breed of the Steppe or from Podolica.
Their characteristic light color, dirt white/grey, has always protected them from heat and the sun. The long ivory-colored horns with black tips are a typical feature of this species . These horns, in bulls and adult females, can exceed one meter in length.
The typical characteristics of the meat from the Maremma breed is the flavor associated to a high protein content and a moderate presence of lipid and an excellent balance between saturated and unsaturated fats. This means that this meat is sought after by gourmets and, at the same time, it is recommended to people with anemia and high protein and low fat diets.
