The buffalo reared in Italy is the so-called River, formerly known as "Mediterranean buffalo." This race of buffalo was shaped thanks to the long isolation and lack of cross-breeding with buffaloes belonging to other groups. This has allowed the formation of a morphologically and functionally different breed.
Its red meat has a sweet taste with no fat infiltration but only covering fat: the percentage of fat is therefore lower than the one you can find in cattle. The increased water retention ensures that the meat is juicier and tender than other farmed species.
Thanks to its high digestibility it is suitable for everyone, excellent for low-calorie diets and for those who decide to limit beef or pork consumption.
