The Bavarian Scottona is a cattle breed typical of Bavaria and is one of the most prized breeds for beef production due to the care given to the animals during breeding. They are fed exclusively with grains (30% spelt and 70% barley, oats, and wheat), with no animal-based meals and, most importantly, no anabolic substances. These cattle are free to graze outdoors until a few months before slaughter, allowing their muscle mass to develop healthily. In the final months, they are kept in barns, where the reduced movement enhances the refinement of the muscle tissues, making them more tender. During this last phase, the so-called "marbling" (fat infiltration) is perfected. The result is an extremely tender and flavorful meat.
